The Cuisine

Evangeline’s menu features fresh, fun versions of bistro favorites like croque madame and French onion soup.  Standards such as assiette de fromages  and tour de fruits de mer are given new life in their interpretations by Chef Sharp and Chef Rios.  Our plats du jour–daily specials– range from gumbo ya-ya to shrimp etouffee.  Most exciting, perhaps, are the ‘instant classics’ of our own making, like beef tartare and whole sole almandine.  The menu layout is simple and clear, yet attractive and tempting.  The flavors are big, bold, beautiful, and yet sublime–but ”subtle” is not an adjective used to describe the food at Evangeline.

The design, by Shirley Robinson, weaves together the soft leather and dark wood of a broken-in neighborhood bistro, the sunshine and greenery of Napa Valley, the bucolic charm of Provence, and a hint of New Orleanian mystery.  High-backed leather banquettes, Douglas fir tabletops, and soft lighting welcomes diners and drinkers into a bistro and bar as comfortable as your favorite pair of shoes.  As rock-and-roll provides a steady rhythm to the room, smiling servers provide efficient, personable, friendly service.  The chatter of a cocktail shaker and pop of a champagne cork accent the conversation in Evangeline’s lively indoor space.

THE LIBATIONS

Our beverage program features toe-tapping cocktails, lip-smacking beers, and tantalizing wines.  Relationships that we have established while operating Solage carries over to exclusive bottlings and keggings that we feature at Evangeline, where we have eight taps for wine and six taps for beer.  The wine list consist of approachable but well-chosen wines ici la bas–”from here and there”. The wine list is divided into two sections: Monde Ancien (Old World) and New World. The selections made by our Sommelier and Wine Director Sasan Nayeri are focused on wines of Burgundy, Rhone and Italy in the Old World category, and pays homage to the wines of Napa Valley in the New World.

Cocktails will showcase local liquors used for New Orleans classic such as the Sazerac, while the draught beer selection will be shine a spotlight on Northern California’s fantastic choice of breweries (while including the legendary Abita Turbodog from Abita Springs, La.)

Evangeline is open nightly for dinner from 5:30 PM till 9:00 PM and open for Weekend Brunches from 9:00 AM till 2:00 PM.

Guest may bring their own wine to enjoy if they so choose. A corkage fee of $20.00 per each 750ml bottle is applied in such cases.

Directions

From San Francisco and points south: take I-80 East. After passing Vallejo, take the Highway 37 exit towards Napa. Take the Highway 29 exit and head north towards Napa. You will pass through Napa and St. Helena and arrive at a blinking red light in Calistoga at Lincoln Ave. Turn right on Lincoln and turn left at the next traffic signal. This is Washington St. You will see Evangeline on your right at 1226 Washington St. Your best option for parking is in the free public lot directly across the street, except for Saturday mornings when there is a Farmer’s Market.

From Sacramento and points east: Take I-80 West to the exit for Highway 12 to Napa. Continue until the intersection with Highway 29. Turn right towards Napa.   You will pass through Napa and St. Helena and arrive at a blinking red light in Calistoga at Lincoln Ave. Turn right on Lincoln and turn left at the next traffic signal. From Healdsburg and points north and west: Head South on Highway 101 to the exit for Mark West Springs Road/Calistoga. Turn left and proceed until Mark West Springs Road dead-ends at a red blinking light. This is Calistoga Road; turn left and follow it down into Napa Valley. At the 4-way stop sign (Highway 128), turn left towards Calistoga. You will arrive at a blinking red light in Calistoga at Lincoln Ave. Turn left on Lincoln and turn left at the next traffic signal. This is Washington St. You will see Evangeline on your right at 1226 Washington St. Your best option for parking is in the free public lot directly across the street, except for Saturday mornings when there is a Farmer’s Market.

Parking

There is plentiful free parking in a public lot across the street from Evangeline. There is also free street parking in the surrounding neighborhood and business district.

Brandon Sharp

Brandon Sharp is the Vice President of Culinary Operations for Solage Hotels and Resorts, and the Managing Partner of Evangeline Calistoga.  As Executive Chef at Solbar, he has been awarded a Michelin star from 2010-2016.  An alumnus of The French Laundry (Yountville), Restaurant Gary Danko (San Francisco), and Restaurant August (New Orleans), Brandon lives in St. Helena with his wife, Elizabeth, and their three children.

Chef Gustavo Rios

As Executive Chef of Evangeline, a new French bistro with a Creole soul in the heart of downtown Calistoga, Chef Gustavo Rios manages all culinary operations at the restaurant.

Rios brings a passion for thoughtfully created cuisine, cultivated at some of the best restaurants on both the East and West Coasts. Prior to Solage, he served as Chef de Partie at Bouchon Bistro, a Thomas Keller restaurant in Yountville and at The Inn at Little Washington in Virginia. He previously worked as a Chef’s Assistant at the Peninsula Beverly Hills Roof Garden Restaurant. A 12- year veteran of the culinary arts, Gustavo began his career managing a small tapas-style kitchen in the summer seasons at the River’s Inn Restaurant in Virginia.

Sasan NayeriSasan Nayeri

Sasan Nayeri brings over fourteen years of experience to his role as the General Manager of Evangeline, having worked in some of the top restaurants in both Colorado and Napa Valley. Most recently he was the manager and sommelier at the michelin-starred Terra Restaurant in St. Helena. Prior to that he was the wine director and general manager of Mateo Restaurant Provencal in Boulder, Colorado. He attended his first vendemmia in Castiglioncello, Tuscany in 2013 where he participated in all aspects of the harvest and vinification for Fortulla and Sorpasso vineyards. In addition to his role as the General Manager, Sasan also leads the wine and beverage program at Evangeline. Sasan is a graduate of University of Colorado at Boulder, and has completed certified coursework through the Court of Master Sommeliers, American Chapter.
