Tagliatelle Al`Ubriacco: Tagliatelle pasta cooked in merlot served with guanciale, prosciutto San Daniele, soft cooked egg and arugula all topped with freshly grated Parmiggiano Romano.

Sous-Vide Cod and Beet pure: Soft cooked Ling Cod served on a creamy beet pure with sauté yellow wax beans, confit zima tomatoes, crème fraiche, egg yolk, caviar and gremolata.
Short Ribs and Cipolline: 24hr Braised beef short ribs on Barolo and sauce, served with purple potato pie, pomme mousseline, roasted cipollinis and arugula.
Burnt Carrot: Burnt wood carrot overnight served with red gritz, pea and mint salad, honey dressing, apple and raspberry gel , brined tiny vegetables and micro fire sticks.
Dessert
Soft Chocolate Bar: Soft Valhrona chocolate bar served with pink apple chips, huckleberry syrup and sweet mascarpone and wild berry soft mousse.
